Full of flavor, our grassfed and finished lamb shoulder chops (aka steaks) are versatile and simple to prepare. They are best prepared on high heat in an iron skillet, seared 3-4 minutes per side for a medium rare or medium prepared cut. Or they can be braised low and slow. Shoulder chops have a wonderful marbling for our grassfed and finished lamb, really bringing out delicious flavor in every bite.
